Happy Birthday Ink Or Milk ! (and how to make banana-walnut muffins)

Yesterday my blog had its two-year-anniversary! I am happy and proud that I found the time, discipline and creativity to keep on going, especially when you know that most new blogs don't even last a year. Of course I couldn't have survived without you, my readers!

Here is a recipe to celebrate:

Banana-Walnut Muffins

For 12 muffins you need:
  • 5 ripe bananas
  • 240 g flour
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 90 g sugar
  • 60 g oil
  • 1 egg
  • 120 ml of milk
  • 100g of minced walnuts
  • chocolate coating (the one that hardens)

  1. peel the bananas and mash them with a fork in a bowl
  2. add flour, baking powder, salt, sugar, egg and milk
  3. stir everything well with an eggbeater
  4. depending on the texture you can add a little bit of milk
  5. mix in the walnuts
  6. fill the dough in papercups and bake them about 20 minutes in a temperature of 180 degrees
  7. resist the temptation of eating them immediately and let them cool off (the chocolate coat will not harden if they are still hot)
  8. heat the chocolate coating in a water bath and cover the muffins
  9. put some walnut pieces for decoration in the still fluid chocolate
  10. enjoy!! :)
